Daily Eats: Lunchtime Meeting

In this new series, I’ll show y’all what I eat in a given day. I love reading posts like this – they always give me great ideas for new recipes or ingredients to try! I’m pretty busy, so most meals will probably focus on easy-to-put-together, healthy, and yummy combinations. Of course, there’ll be delicious indulgences and more complicated cooking endeavors thrown in here and there, too! Ok, let’s do this.

I wasn’t very hungry when I woke up this morning, so I decided to put off breakfast until I got to work. After my hour commute on the bus, I was happy to find this in the office kitchen. Cereal (always a mix of a few different types) and milk with coffee. And water, of course – I always keep this bottle with me, and fill it up multiple times throughout the day.

That bowl of cereal was as small as it looked. By mid-morning I was hungry again, so I grabbed a pear. It was a bit under-ripe, but still tasted yummy.

I had a meeting during lunch, so grabbed this plate before heading into the conference room. The office serves hot lunch every day – lucky me! Today was Middle Eastern. I had some chicken, rice, tzatziki, veggies, and a sweet phyllo square for dessert. It was all delicious. I didn’t eat the falafel you see on my plate because it was a little dense and bland.

That lunch plate kept me full for the rest of work. On the way home I stopped at the farmer’s market for some fresh produce. I was starting to get hungry, and knew I wanted to fit in a workout before dinner, so I picked up this snack. A peanut butter cookie with apricot jam filling – so yummy! I was totally satisfied after half, so saved the rest for later.

After getting home, I headed to the track for a workout. My favorite combo is walking, jogging, sprinting, and strength moves like pushup and squats. I mix them all together so I never get too bored. Tonight, I walked for about 20 minutes in the middle while chatting with my brother. Then, it was dinnertime. I made whole wheat fusilli with sautéed zucchini, my mom’s homemade pesto, and parmesan on top, some spinach, and one half of an avocado topped with lime juice and salt. Look at all that green! I was glad I got to fit in so many veggies, since I didn’t have many at lunch.

And to finish off the night, the other half of my cookie and a square of dark chocolate, slowly enjoyed as I write up this post. That’s all, talk to y’all later!
