After a relaxing weekend at home, I had to wake up early yesterday morning to catch the bus back to San Francisco. Luckily, I had a piece of delicious coffee cake to snack on during the ride. This buttermilk coffee cake is my grandma’s recipe, and my mom made it often throughout my childhood.
Lunch was pretty simple: some barbecued chicken and a salad. Nothing fancy or exciting, but yummy and filling nonetheless.
I brought these Gravenstein apples with me from home, and enjoyed one as a mid-afternoon snack. It was sweet, a little tart, and super crunchy. I love snacks that keep me occupied for a little while.
For dinner I made another childhood favorite: mac and cheese! I picked up a box of white cheddar shells at TJ’s a few weeks ago, thinking it would come in handy. I was right, since I’m in desperate need of some groceries. I paired the pasta with leftover green beans and some fresh berries. I was able to whip up a pot of oatmeal while cooking the pasta, so I’ve got breakfast covered for a few days too!
