Here’s another pumpkin recipe for ya! These cookies are so easy to throw together with just a few pantry ingredients – mostly pureed pumpkin and rolled oats. They’re moist, chewy, and not-too-sweet. Feel free to substitute the spices with two teaspoons of pumpkin pie spice, like the one sold at Trader Joe’s. A couple cookies would make the perfect afternoon snack or easy breakfast, especially paired with some Greek yogurt or a tablespoon of peanut butter.

Pumpkin Oatmeal Cookies

Makes 12 cookies

Ingredients

  • 3/4 cup pumpkin puree
  • 1/4 cup maple syrup
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 cup oats, ground
  • 1/2 cup rolled oats
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1/4 cup chocolate chips

Directions

  1. Preheat oven to 350°.
  2. In a large bowl, stir together pumpkin puree, maple syrup, coconut oil, and vanilla extract.
  3. In a small bowl, stir together oats, baking powder, salt, and spices.
  4. Add oat mixture to pumpkin mixture and stir until just combined.
  5. Stir in chocolate chips.
  6. Scoop rounded tablespoons onto a baking sheet. Bake until firm to the touch, about 12 minutes.
