Yesterday it was pouring when I woke up, so I couldn’t walk to work. Instead, I hopped on the bus. Once I made it to the office I enjoyed these oats with pumpkin puree, raisins, cinnamon, and peanut butter. I also sipped black tea throughout the morning, as ominous clouds filled the sky outside my window.
Lunch was Indian food. Specifically, some chicken, rice, lentils, and eggplant. The eggplant was delicious, but my favorite part of the meal was the lentils’ coconut broth. For an afternoon snack I enjoyed a pink lady apple, plus a couple pieces of chocolate.
I got home late, and it was so dark out. I quickly turned on the oven, and started preparing lots of yummy vegetables to roast. I purchased them all at the Saturday farmer’s market: broccoli, eggplant, carrots, and onions. After cooking them for about 25 minutes at 400°, I piled a big serving on my plate. On the side I added some leftover whole wheat pasta with a yummy butternut squash sauce and parmesan.
This dessert was amazing – homemade apple crisp. This is honestly one of my very favorite desserts. It’s the perfect warm, sweet, cozy fall treat. Don’t worry, the recipe will be up soon!
