I did lots of cooking on Monday night, which fueled yesterday’s meals. For breakfast, I packed up two chocolate banana muffins. I spread them with coconut oil and chopped them up, then heated the whole thing in the microwave when I got to work. The muffins are rich with cocoa and sweetened with ripe banana, so they’re a delicious and wholesome breakfast option – especially nice and melty!

For lunch, I had a big salad with spinach, cucumbers, marinated artichokes, and persimmons (a strange but yummy combination). I also enjoyed some egg noodles and two meatballs. I finished the meal with a small slice of lemon cake.

I skipped my normal afternoon snack, so I was super hungry by the time I got home. I enjoyed lots of leftovers from Monday. First, butternut squash and farro – look out for the recipe coming tomorrow. Also, these green beans were amazing. I tossed them with olive oil and salt, then roasted them at 400° for about 25 minutes. They were a bit caramelized and crunchy – so good. On the side I added a brown rice cake as a vehicle for the big dollop of hummus I was craving. After eating I did a quick workout with my roommates, then enjoyed a big bowl of popcorn and some chocolate chips.
