Hey y’all! It’s been a while since I’ve posted my daily eats. I ate so much delicious food over the long holiday weekend, but come Monday I was feeling a little less than on point. So this week, I’ve been trying to fit in tons of veggies and take it easy on the sugar, meat, and dairy. So far so good – everything has been delicious, and I’m definitely feeling lighter already. Yesterday for breakfast I enjoyed oats (steel cut, to switch things up) with some defrosted blueberries, peanut butter, and a dab of honey.

I decided to pack lunch since I had some delicious leftovers to get through. Recipes for both of these dishes will be coming soon. I don’t want to spoil the surprise, but they’re super delicious! My breakfast was pretty filling, so I only ate half of the pasta. Saved the rest for today’s lunch!

For an afternoon snack I enjoyed a banana bread cookie and two tangerines – one of my very favorite foods! Mom sent me home from the weekend with a big bag of these guys, which I’ve placed on my desk at work. They’re the perfect refreshing and sweet treat. Oh, and I enjoyed a couple more tangerines about an hour later – what can I say, I’m addicted!?

On Tuesday night I made a big batch of my mom’s minestrone soup. It’s loaded with beans, rice, and about fifty kinds of vegetables. I enjoyed a big bowl last night – what a perfect combination of crunchy cabbage, sweet carrots, and lots of other yummy tastes. On the side I enjoyed a baked sweet potato topped with coconut oil, cinnamon, and salt (such a good combo!), plus some carrot slices dipped in hummus. So many good plant-based items! And a couple squares of dark chocolate for dessert.
