Breakfast yesterday was steel-cut oats with raisins, cinnamon, peanut butter, and some extra almond milk, plus a perfectly ripe pear. I was super hungry when I got to work, so the warm and comforting oats plus the sweet pear were perfect! I really enjoyed how the almond milk added on top made the oats extra creamy.
Lunch was Italian food, and I put together this veggie-based plate. Lots of cauliflower, plus some delicious mashed potatoes (with roasted garlic and thyme), and eggplant parmesan. The eggplant wasn’t very good, so I only ate about half of it.
I sipped on ginger tea throughout the afternoon, and got pretty hungry by about three so I was glad I had packed this snack! I enjoyed a delicious Fuyu persimmon from my parents’ neighbors, plus about half of these pecans. I’ve been loving these nuts lately!
When I got home I roasted up a ton of veggies I had sitting around – delicata squash, potatoes, onions, zucchini, and carrots. I enjoyed a big plate of these guys with some hummus, plus the last serving of minestrone soup from last week. All in all, a yummy set of meals for a Monday.
