We’re heading out to visit family soon, but I wanted to stop in real quick to share some of the delicious holiday treats we’ve been enjoying! Yesterday morning my mom made a fun and festive holiday breakfast: oatmeal with raisins and a drizzle of Bailey’s! Apparently this is a classic combination in Ireland, and it was super yummy.
For lunch I enjoyed some pumpkin soup my mom made with a pumpkin she grew! I’m always so impressed by the amazing produce that fills her garden. I also had some salad with sliced apples, a little cheese, and balsamic vinaigrette, plus a couple of Christmas cookies!
After my brother and I finished working for the day, we all headed to a holiday dinner in a nearby manor. The beautiful house was adorned with festive and glittery decorations, and interspersed among the five courses were carolers and a visit from Santa.
After being seated, we were brought an egg shell filled with smoked egg sabayon, watercress puree, diced potatoes and prosciutto – so fancy!
The next course was a dungeness crab salad with almonds, orange segments, and a green goddess dressing.
Followed by celeriac and potato soup with bacon.
For the main course, we all enjoyed perfectly cooked beef wellington with mashed potatoes, rapini, and a red wine reduction.
And dessert was individual buche de noel with chocolate cake, candy cane mousse, and meringue mushrooms. This dinner was such a fun and festive way to kick off the long Christmas weekend. We returned home happy, well-fed, and definitely in the holiday spirit!
