Hey y’all! How was your weekend? I hope it was relaxing, fun, and full of yummy food! I spent most of yesterday at home, just venturing out for a long walk and to pick up some groceries. After waking up, I read in bed for a while – such a luxury! Hunger finally pulled me to the kitchen, so I made this brunch plate. A couple of scrambled eggs, a small quesadilla made with my last tortilla, and half each of a banana and peach. It was nice to take some time to enjoy a leisurely breakfast, since during the week I’m usually running out the front door to catch the bus.
In the early afternoon I took off for a long walk. I retraced the route I used to take to walk to my high school – what a fun trip down memory lane! Next I went to Trader Joe’s to pick up a couple of things. I ended up leaving with more than double the items I went in for because there were some new products I’d never tried before. Seriously, you can’t trust me around TJ’s. For the past few weeks I’d been craving frozen yogurt, so I also stopped at Yogurtland for a small snack. Coconut yogurt topped with berries, chocolate chips and granola is my favorite combo.
Dinner was this couscous salad. I had a large scoop atop romaine leaves. It was light and yummy. I won’t share too many more details here, since I’ll be posting a recipe tomorrow! Make sure to check back…
And I finished off the night with chamomile tea and a piece of shortbread. I haven’t been sleeping super well, and I thought the tea would help me to calm down in preparation for bed. I think I need to reconsider my caffeine consumption. I’ll work on that, and let you know how it goes.
