Daily Eats: All the Veggies

I normally bring breakfast along with me to the office, but yesterday I decided to eat at home. It was nice to sit at the counter and relax for a few minutes before heading out into the world. Recently, I’ve been starting my morning with a large glass of water with some lemon juice and apple cider vinegar mixed in. It’s refreshing and feels detoxifying. Yesterday, I also had a couple of my banana peanut butter muffins and a mug of English breakfast tea. It was definitely a solid start to the week!

I completely forgot to snap a photo of my lunch, but it was Chinese (again): tofu, rice and veggies.

Daily Eats | Glitter & Grace BlogAfter work, I stopped at Target to pick up a few more items for the apartment. It was my second trip in two days, haha. But things are definitely starting to come together – I look forward to showing you some of my progress soon! Then I took the bus home, but quickly headed out again to fit in a workout. I jogged up to the Lyon Steps, which are about six blocks from my apartment. They were crowded with other athletic professionals, but still a great place to get in some strength and cardio. I ran up and down the many flights of stairs a couple of times, and mixed in some arm exercises as well. After jogging home, I assembled this easy dinner that was super loaded with veggies. A big salad with beets and avocado, carrots and roasted broccoli with hummus for dipping, and a quick trail mix put together with some of my favorite Trader Joe’s snacks.
