Yesterday was a sort of strange day of eats. I really wasn’t hungry when I woke up, and still didn’t feel like eating by the time I got to work. So I made some ginger tea and enjoyed sipping it throughout the morning. I knew I would get hungry eventually, but didn’t want to eat anything before I was ready. Then, around 10, I enjoyed the last of my farmer’s market persimmons.
Lunch was Hungarian food. The pork wasn’t very good (it was way overcooked) so I only ate a couple of bites. That cheesecake, however, was delicious! I made some more tea right after lunch. In the middle of the afternoon I snacked on a few carrot sticks, some pecans, and plantain chips.
I was at the office late because we’ve been having some trouble with the project we’re working on. When I finally made it home, I was hungry! I put together this little bowl of brown rice, refried beans, a few string beans, and half of an avocado. I also enjoyed a large salad with the rest of the avocado and my current favorite dressing. It’s so simple, just a spoon of dijon mustard with olive oil, balsamic vinegar, salt, and pepper.
After dinner I painted my nails and then caught up on The Vampire Diaries. I snacked on a bowl of popcorn (with coconut oil and salt) plus a few chocolate chips. All three of my roommates were out on dates, so it was just the pup and I! Have I told you how much I love Lulu? She’s totally won me over.
