I spent most of this weekend laying low, trying to recover from a cold that began bothering me last week. I’m happy to say that I think all the sleeping and hot tea worked, because I’m feeling much better! Yesterday morning I slept in, then prepared this bowl of oats. There’s a secret ingredient in there, but I won’t spoil the surprise yet. Check back tomorrow for the recipe! I topped my oatmeal with peanut butter and these delicious roasted coconut chips from TJ’s – I highly recommend them.
The oatmeal kept me full for hours. I spent a while researching flights for a couple trips I’m hoping to take later this year. Then, I fit in a long walk. It was nice and sunny, and I tackled the hills of Berkeley to get in a good leg workout. By the time I got home it was around 3, and I didn’t want to spoil my dinner by eating too much. So, I prepared this snack plate: carrots with salsa and hummus, plus red grapes. I absolutely love cold, crunchy red grapes – they’re so refreshing and definitely one of my favorite snacks!
This dinner was totally delicious. I sliced up a chicken sausage, and sautéed it with zucchini. Then, I tossed it with lemon pasta, and added olive oil and fresh lemon juice. The bright lemon flavor was a nice contrast to the hearty sausage. I added lots of arugula on the side with more olive oil and lemon juice for dressing. I’m already looking forward to enjoying the leftover pasta for dinner tonight! And I finished off the night with a couple squares of dark chocolate and some more coconut chips. I’m telling you, they are addicting!
